Sole

A family of flatfish of which the Dover Sole is the most well-known, found along the East Atlantic coast and in the Mediterranean. It has a chestnut-coloured back and off-white belly, and its delicate flesh has a mild, buttery flavour. It can be eaten fried or grilled.
