
The Greek term for cheese pie. It is made with layers of buttered phyllo pastry filled with a mixture of cheese and egg and comes in a number of different forms: triangular, Skopelitiki (spiral), Kourou (semi-circular with thick pastry), sfoliata (puff-pastry).
