
Sweetbreads is a delicacy. It is the culinary term for the thymus gland (throat, gullet or neck) or the pancreas gland (heart, stomach or belly) of a calf or lamb. It is soaked in salt water, poached in milk, dried and chilled and then either grilled, sauteed, fried, or used in pates or stuffing.
