Kopanisti is a typical spicy cheese that originates from Mykonos and is highly appreciated for its unique piquant flavor.

4 cups of cooked chicken (boiled or roasted), chopped or grated
1 medium onion, chopped
1 clove of garlic, chopped
3 table spoons olive oil
1 cup kopanisti
cup of chopped parsley
4-6 lettuce leaves
a few s of Tabasco
salt & pepper

Sauté the onion and garlic in a tablespoon of oil. Mix the chicken in with the onion, the kopanisti and the rest of the ingredients. Serve in the leaves of lettuce.

Any soft, spicy cheese can be used
