The golden-yellow, pear-shapped fruit of a temperate climate bush "Cydonia oblonga". The ripe flesh is juicy and yellow with a pronounced scent, but generally too sour to eat raw and is therefore always cooked whence it turns red. Quince can be roasted, baked or steamed and is used in jams, preserves, spoon sweets and jelly, as well as to enhance the flavour of apple pies.
