Agourelaio

In Greek, agourelaio literally means "unripe-oil". It is the prime, extra virgin olive oil, pressed from the first olives harvested, that are green and not fully ripe. Its colour is an intense emerald green, it is very low in acidity, and its aroma is fresh and strong.
