Pan-Fried Formaella Cheese

Formaella from Arachova Parnassou  is traditional Greek cheese. It is a hard cheese with piquant taste and rich flavor, which is often consumed fried as “saganaki” .

1/2 lb cylinder of formaella cheese, cut into 1/4-inch rounds
1/2 cup all purpose flour for dredging
2-3 tbs butter
1 lemon, halved or quartered

1.  Lightly dampen each round of cheese by running it under the faucet.

2.  Dredge it lightly in the flour and shake off the excess.

3.  Heat the butter in a large nonstick skillet and fry the cheese slices a few at a time over medium-high heat, until they begin to soften and melt.

4.  Remove, place on a plate and serve, sprinkled if desired with lemon juice.

Tip

You can omit the lemon and use a sweet fig marmelade to accompany the cheese
